Description

Loosely based on a Berliner Weisse with a Wild Beer twist. We have used 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation. It is slowly fermented, matured and soured for 4 months in the barrel and will continue to evolve in the bottle.
